Ingredients:

  • 1 tablespoon of vegetable oil
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 1 tablespoon of dried chili peppers (adjust to your desired spice level)
  • 1 tablespoon of dried coriander
  • 1 tablespoon of cumin
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of ground black pepper
  • 1 (15-ounce) can of diced tomatoes
  • 1 (15-ounce) can of vegetable broth
  • 1 tablespoon of cornstarch
  • 1 tablespoon of water

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.
  3. Add the chili peppers, coriander, cumin, black peppercorns, and ground black pepper. Cook for 1 minute, stirring constantly.
  4. Add the diced tomatoes and vegetable broth to the pot.
  5. Bring to a boil, then reduce heat to low and simmer for 15 minutes, or until the vegetables are tender.
  6. Add the cornstarch and water to the pot and whisk until dissolved.
  7. Serve over rice or noodles.

Tips:

  • For a richer sauce, use high-quality tomatoes.
  • You can adjust the spice level by adding more or fewer chili peppers.
  • Serve with a side of crusty bread for dipping.
